‘We care about what you eat and about what's happening to our climate, which is why we started Meat Free Monday,’ says the Meat Free Monday organization.

 

Meat Free Monday is an environmental campaign to raise awareness of the climate-changing impact of meat production and consumption. Many people are unaware that livestock production is responsible for 18% of global greenhouse gas emissions – that’s more than the entire transport sector.’

‘We are all looking for a way to make a contribution to the preservation of our planet,’ says actress Gwyneth Paltrow. ‘Having a Meat Free Monday is a great way to do your bit, while eating in a kinder and more conscious way.’

So, this is What You can Do

You can sign up as a supporter of the campaign and pledge to do your bit by having one meat-free day a week.

‘In the future we are all going to have to change the way we eat,’ says McCartney. ‘We believe that it is possible to do things like changing our diets with a sense of optimism, joy and the satisfaction that you are really helping to make a difference in the world.’

Cheddar and Spinach Pie

Serves 6

 

Ingredients

Pastry

o    340g plain flour

o    170g butter

o    iced water to bind

 

Mix

o    2 onion2, peeled and sliced

o    30g butter

o    1 potato, peeled, cubed & par cooked

o    180g English spinach, picked & blanched

o    285g cheddar, grated

o    3 eggs

o    90ml double cream

o    Few sprigs thyme or parsley

o    Trace grated nutmeg

 

Method:

o    Set oven at 200c.

o    Caramelise the onions with thyme or parsley. Cool.

o    Rough chop spinach and add to onions and potato once cooled.

o    Add remaining ingredients and season maybe with a little pepper, but be easy on salt as cheese is salty.

o    Mix pastry ingredients and roll out. Cut enough to line the base and sides of a pie dish. Fill the base with the mix and roll remaining pastry to cover the top.

o    Bake for 25 minutes.

o    Serve with a fresh salad and ice-cold apple cider.
